The series I liked watching were Big-O, Cowboy Bebop, and Ghost In The Shell: Stand Alone Complex.
Anime Movies I enjoyed were Street Fighter (Japanese Version), Cowboy Bebop: Knockin' On Heaven's Door, Millenium Actress, Princess Mononoke, Spirited Away, and Howl's Moving Castle. I know the movies by Miyazaki are a bit "childish", but they are great movies nevertheless.

DNAngel
xxxHOLIC/Tsubasa crossover (yeah, that's manga, but still...)

Key is an old classic.

I've just finished watching the entire series of Karin Chibi Vampire. A damn good anime it was too.
My friend recently got me into Pretear, sort of based on Snow White. That's really good too.
If studio Ghibli films count, I love a good majority of them too. I spent a whole week watching the Studio Ghibli season on Film 4 ^_^
Part of me thinks there should be a manga thread set up too...

Elfen Lied was an AMAZING anime, in my opinion.
Girls Bravo is rather interesting (male oriented, but no complaints here )
Rozen Maiden (though I haven't gotten far) is pretty good.
Death Note is pretty good (though the manga started sucking hardcore after Vol. 4, and even worse after Vol. 8)
Onegai Teacher was pretty cute, as well.
I haven't been exposed to much else. I usually have to watch anime from YouTube.

Man, I hope it is, or does get turned into an anime. I've only read an extract from the free teaser I got free with my Princess Ai doll, but it looked good.
I do know that there is going to be a live action film. But sadly it's not going to be japanese. I bet it would have been damn good if it was though.

My friend Cortland told me that he thinks they're going to make that into an anime as well but I'm not sure. I really liked the manga though and I bet it would make a damn good anime! (sad that it's not going to be japanese though.)

Lovely Angels/Dirty Pair (3 original Sunrise episodes English Dubbed on older VHS tape, I also have the same 3 on DVD, but the different voice characters they used sucked) Own 2 different original cells, both of Kei.
Gunsmith Cats (own 3 episodes on DVD English dubbed, and 3 VHS tapes Japanese)
Also own the action figures of Rally Vincent and Minnie May
Ghost in the Shell (I own 16 episodes English dubbed on DVD)
Various episodes, posters and media of Appleseed, Sailor Moon, Debutante Detectives, Vampire Hunter D, Evangelion, Shotgun Mary, Plastic Little, hmmm I forget what else.
And comics of all of the above, and others not mentioned.
Been watching Avatar and Big O lately (some channels call it "The Negotiator" (love the robot servant girl!) I own a cell from one of the episodes.
