As in I was registering for classes and my GF leaves for work and says she loves me. Instead of telling her I love her too, I was stressed cause the site wasn't working right and told her, "I've got to finish this but I love you too."

I just feel like I dismissed her in a very cavalier way and I feel like a dick for it.

People get hyper-focused on things, to the point where they still realize what is going on around them but they don't fully process it so responses are somewhat numbed, this happens to just about everyone. Honestly your response is better than what a lot of people would have done, you indicated that there was a stressor that you needed to focus on resolving and you still told her that you love her.
