Delicious cooking recipes for one

Hello my fellow gawffy gawfs!
I am recently returned home, and after about a month, I am getting a bit tired of the same dish all the time, so I am now looking for delicious and very cheap cooking recipes for one.
I have two I commonly cook up by now:

Mexican pancakes with either beef or chicken.

A recipe that I recently came up with based in the same principles of the spices I use for the beef.
Cook up some pasta, when the water is almost all cooked into the pasta or vaporized, I add corn, paprika and chili along with salt. Cook it further until the water is basically a thick sauce, then add salsa sauce, basil and oregano, slice up one or two cloves of garlic, spread it over the pasta and mix it up.
Eat for delicious taste.

Any other suggestions for something that will cost basically nothing?

Pinto beans (total you'll want about 1lb) are hella cheap when bought in a dried state, also some grocery stores have meat that is on manager's special... and onions are cheap too!

A basic beany stewish delight, gotta soak the dried beans, over night is best. Then you rinse them off, toss 'em in a pot and put some delicious herbs and spices in, I prefer salt, pepper, garlic (lots of garlic), rosemary, oregano, thyme, and some paprika. Let that boil for a bit (about an hour). Take the meat and onions, chop them into manageable bits and fry 'em up with some oil until the meat is cooked and the onions are caramelized. Throw all that stuff in the pot with the beans and spices. Let it boil for another hour or so until the beans are cooked and a little squishy.

This makes enough for at least 4... even if they go back for 2nds. It is delicious over rice, or with buttered bread.

My favorite variation on this little gem, is to get a few different kinds of beans, each bean has its own strange little personality, texture and color and can make it a little less boring... especially when this is pretty much what you have to eat for a while.

Ramen ramen ramen.

Before I had a live-in cook, I would get the oriental ramen packages and mix in tofu bits/vegetables/beans, etc. I like it with lemon and tabasco in. Still do it sometimes but I get nagged about the sodium content.

If you're not one for beans.. here's an easy stir-fry recipe.

Take a zucchini, an onion, and handful of peanuts.... meat wise you'll want 1/2 lb of chicken cut into small strips. Take the chicken and marinate it in a few tablespoons of soy sauce, some wine and corn starch.

Cut the zucchini into coins, if its rather big you may want to half or quarter them, cut the onions into manageable bits... and.. obviously the peanuts will be fine without being cut up.

If you have a wok.. its easier, you'd be surprised how cheap they can be.. but they take a lot of care, a lil' different from a skillet, they don't do soap very well, and must be cleaned immediately after use, however in my experience, they're quite worth it, as their depth proves most useful during the hearty amount of stirring and tossing that stir-fry requires.

So, you put a few tablespoons of oil in your frying contraption, first, throw that chicken in, cook it until its pretty much cooked. Push the chicken aside and put whatever spices you want.. garlic, sesame oil.. or whatever when it becomes fragrant from the heat, throw all those tasty veggies in and give em all a good toss... then throw some delicious sauce stuff in... (soy sauce, wine, corn starch, perhaps some black bean sauce nom), let that stuff steam a little, stir it good.. takes a lot of stiring.. that's why its called stir-fry.. when the sauce is sticking to everything and the veggies look delicious it is done.. serve that shit over rice for best results. NOM!

It all sounds delicious I'm gonna put it down in a text document and try it out next month (I am gonna have to live off of pasta and meat for the rest of the month :P)

Dude, I wouldn't worry about cooking for one - something I do a lot when my gf goes away is make a huge vat of something that can be reheated (mostly out of laziness, but it takes care of the portion issue of shopping for one, too). I make a pretty kickass chill, but pasta-based things are also good for this - if you make a tomato-based sauce and mix the pasta in once it's cooked, you can just microwave that shit when you feel like finishing it up. For the tomato mixer, you can cut up any veg you like, bacon if you're a carnivore, capers if you feel like something salty, or just basil and garlic with salt & pepper if you can't be assed to get fancy.
